Dinner: Chicken Tortilla Crockpot Soup
2 boxes chicken broth, or 8 cups water plus Better-than-Boullion chicken flavor, or home-made stock.
2 chicken breasts
2 cups canned green chilies, (I use the 505 brand green chili which you can get at some stores and at costco)
1 small-medium white onion, diced
1 can diced tomatoes
1 cup chopped swiss chard, kale, or spinach
optional -- 1 cup white wine
Optional -- 4 cloves garlic (not for CF)
can of olives
bunch of chopped cilantro chopped
sour cream or yogurt (not for CF)
cheddar cheese (not for CF)
crushed old, stale, corn chips
Throw first group in the crockpot. Throw chicken in raw, it will cook in the broth.
Pull out the breasts when they are warm enough to cut, or even if they’re fully cooked, and slice into 2”inch cubes and throw back in. It should ‘shred’ itself just by cooking in the crockpot overnight or all-day.
An hour before serving, throw in a 1/4 cup of both green onions and cilantro and stir!garnish with chopped olives, cilantro, green onions, shredded cheese, a dollop of sour cream/yogurt, and crushed corn chips.
Casein Free Version: No garlic or dairy. It still tastes incredible. Add fresh guacamole or pureed avacado if you really need a creamy flavor
Paleo Version: No wine, dairy, or chips.
Vegetarian/vegan: I haven't tried, but I bet this would taste fantastic with black beans and a veggie broth.
